A final garnish to the Osso Bucco story. In the cooking and moving around of the shanks, not to mention the excess liquid, I noticed the marrow had slipped out of many of the bones. As I finished adding the gremolata to the meat I asked the sous chef to find the pieces of "marrow" and put them back into the bones. I made the mistake of using the word marrow in place of the French word "moelle." Several minutes later they sent word to me on the floor to go back to the kitchen. On arrival the cooks said they'd looked all over the kitchen but we didn't have any more "marrons" (chestnuts)! It would certainly have been a new turn on an old dish if we'd had them. I just had to think it served me right for being a bit too demanding...still learning. |
