NUMBER 8 - PEOPLE & EVENTS - RENCONTRES MUSICALES. At the end of October a series of concerts were given at a downtown cultural center. The performers were a mix of international jazz musicians with Moroccan and African traditional artists. Rick's Cafe welcomed the musicians and members of the audience to a post-concert "after hours" jam session. It was really a treat to watch the interaction of the different artists and give our clients and webcasting viewers a sample of the talent - local and foreign - that passes through Casablanca. NUMBER 8 - ADDITIONS AND IMPROVEMENTS AT RICK'S - UPGRADE OF CHEESECAKE RECIPE. We have had cheesecake on the menu almost from day 1, and while it was popular, the taste was far from what we Americans think of real cheesecake. I was told by previous pasty chefs that it was "refined for the Moroccan taste," although Moroccans who've traveled or gone to school in the U.S. were always the first to comment it didn't taste like real cheesecake. With a new pastry chef I was determined to "turn the page." I found a French translation of a REAL NEW YORK CHEESECAKE. A little tweaking here and there and we now have the real thing...no Graham Cracker crust, unfortunately, but it's really delicious, especially our Cheesecake "Lux" with fresh raspberry topping. |
